Green Beans, Chickpea & Kale Stir-fry

A simple Green Beans, Chickpea & Kale vegetarian Stir-fry.


  • 1 Large Brown Onion (finely chopped)
  • 1 Red Capsicum (sliced long ways)
  • Green Beans
  • Ginger (grated or thinly sliced)
  • 2 cans Chickpeas (Rinsed)
  • 1 bunch Kale (Chopped)
  • 1 cup Water
  • 1 bunch Coriander
  • 1 wedge Tofu (Chopped into cubes or preffered)
  • 2 tablespoons Soya Sauce/Tamari Sauce
  • 1 tablespoon Sweet Chilli Sauce
  • 1 Shallow Frying Pan
  • 1 Deep Dish Frying Pan
  • 1 Shallow Frying Pan
  • 1 Deep Dish Frying Pan


In the Deep Dish Frying Pan
Step 1.
Brown Onion
Fry the onion till browned
Step 2.
Red Capsicum sliced
Add the Sliced Capsicum
Step 3.
Add the Sliced/Chopped Ginger.
Step 4.
Chickpeas - rinsed
Add the rinsed chickpeas
Step 5.
Green Beans
Add the rinsed Green Beans
Step 6.
Cover with a lid for 5-10mins
Step 7.
Kale - Shredded
Then take the lid off and add the Kale.
Step 8.
Add the cup of water and cover again for a couple mins
Step 9.
Take lid off and add the bunch of corriander
In the Shallow Frying Pan
Step 10.
Fry up the chopped tofu, sweet chilli and soya sauce.
Mix together
Step 11.
Green Beans Chickpea Kale Stir-fry
Once the tofu is fried up, add it back to the deep frying pan and mix with all the other ingredients. And Serve!
