<p><strong>Ingredients: (4-6 Servings)<br />
</strong>200g (6½ oz) Flat rice noodles<br />
Olive Oil<br />
300g (10 oz) Chicken breast &#8211; sliced (or tofu for Vegetarian Option)<br />
2 Sliced Spring Onions (Scallion)<br />
1 medium Carrot (finely chopped)<br />
1 medium Zucchini (thinly sliced - ½ or ¼ circles)<br />
2 Tbls Water<br />
2 crushed (or finely diced) Garlic Cloves<br />
2 Eggs (Lightly Beaten)<br />
¼ cup (60ml or 2 fl oz) Fish Sauce<br />
Sweet Chilli Sauce &#8211; GF (As much as you desire)<br />
¼ cup (60ml or 2 fl oz) Tomato Sauce &#8211; GF<br />
2 Tbls Lime Juice<br />
1 Cup (90g or 3 oz) Bean Sprouts<br />
Fresh Coriander (Finely Chopped)<br />
2 Tbls Dry-roasted Peanuts (chopped) &#8211; Remove from recipe if you have a nut allergy.</p>
<p><strong>Cooking Instructions:<span id="more-1168"></span><br />
</strong><em>*Before commencement of cooking, make sure all ingredients listed above, are either sliced, chopped or beaten.</em><br />
1. Place the flat rice noodles into a large bowl and pour boiling water over them. Place aside for 10mins. Once softened (cooked), drain away water.<br />
2. Heat some olive oil into a wok or a deep frying pan.  Add the chicken (or tofu) slices and cook until surfaces start to brown.  Now add the carrot, zucchini, garlic, and spring onion, with 2 Tbls of water. Cook for 3 mins and push to the side of the wok/pan.<br />
3. Add the Beaten eggs to the other (empty) side of the wok/pan, and scramble the eggs lightly. Then stir the eggs back in with the other heated ingredients.<br />
4. Add the cooked flat rice noodles, the 3 sauces and lime juice to the wok/pan and stir.<br />
5. After all the ingredients are cooked. Turn off the heat and toss through the bean shoots, coriander and peanuts.<br />

<p>So what&#8217;s the health benefits of exercising?<br />
- Exercise, as I&#8217;m sure you&#8217;re well aware of is a great way to burn off fat and build up your muscle mass. Building up your muscle mass keeps your body stable and helps keep off fat returning, that you&#8217;ve lost it from exercising.<span id="more-1099"></span><br />
- With regular exercise, your body will become strong and therefore functioning better. Your muscles get stronger and bigger but your insides also function better. Exercise improves the movement of oxygen and nutrients in your cells and organs and because of this, your waste removal improves.<br />
-  Your blood flow is improved by exercising, which prevent many health problems which are usually associated with age.<br />
- Keeping fit slows aging, improve memory, builds new brain cells and best of all, boosts your mood.<br />
- With Cardio exercises, your lung function will improve your oxygen-carrying capacity, meaning that all of the above points I have mentioned about blood, cells,  muscles and organs will work.</p>
<p>So now you know why you should start exercising, start doing it! Go for a walk, a run, ride the bike that&#8217;s been hidden away in the garage, lift some weights, , go for a swim or try something new, like Pilates, Yoga or martial Arts. Whatever your goal with exercise, make it fun and make it achievable. Exercise is a way of connecting with your body, mind and soul on its path to becoming stronger and healthier.</p>

250gram buckwheat pasta (or another gluten/wheat free pasta such as a vegetable pasta)<br />
500gram mixed frozen veggies<br />
2 Pinches of salt<br />
Sprinkle of Pepper<br />
1 Pot<br />
1  Frying Pan</p>
<p><span style="text-decoration: underline;"><strong>Cooking Instructions:<span id="more-1087"></span></strong></span><br />
Preheat 1.5L of water in the pot on high heat<br />
Preheat Frying Pan lightly with some oil</p>
<p>Add mince meat to Pan<br />
Cook mince meat on medium heat till cooked all the way through<br />
mash apart mince, turn heat for Pot of water to high<br />
Add 1 pasta sauce to mince meat pan and stir on low heat</p>
<p>Once water boils, turn to medium heat and add the gluten free pasta<br />
When pasta is cooked add frozen veggies<br />
Once frozen veggies are heated, drain water from pot</p>
<p>Add mince meat to Pot, full of cooked pasta and cook veggies<br />
Add the 2 pinches of salt and pepper.<br />
Stir pot on medium heat for 1 minute and its ready!</p>

Simply boil the rice in a pot or in the microwave or use absorption method, whichever you feel more comfortable. (I will provide a tutorial on absorption method soon).<br />
Now pour the desired amount of coconut milk or cream in the well strained rice and mix.</p>
<p dir="ltr">SAUCE:<br />
In a bowl, Mix 1 Tsp Olive oil, 50ml Fish Sauce, 1 Lime squeezed.</p>
<p dir="ltr">CHICKEN &amp; HERBS<br />
Chop the Red Onion, Lemon Grass, Chives, Chillies and Garlic &#8211; Put aside into a bowl<br />
Heat 1 Tbl of Olive Oil in Frying Pan #1 and Frying Pan #2<br />
Add Chicken to Frying Pan #1 and cook on a low heat, until all surfaces of chicken are cooked, but do not overcook the chicken to the point of chewiness. (All surfaces should be white, just starting to brown).<br />
At the same time, Add the Red Onion, Lemongrass, Chives, Chillies, Garlic, Cashews, to Frying Pan #2.<br />
Cook these ingredients until soft and caramelised and add the Sauce &#8211; (Olive Oil, Fish Sauce and Lime Sauce).<br />
Once the Chicken is cooked and the Herbs are sweet, turn both frying pans off. They are complete.</p>
<p dir="ltr"><span style="text-decoration: underline;"><strong>Serving:<br />
</strong></span>Lay the Rice on the bottom of the Bowl/Plate<br />
Place a desired amount of Chicken pieces on the rice<br />
Top with the herbs and sauce mix.</p>
